We present a home-style version of a cocktail found on our latest cocktail list. Designed as a batch prepared mix which is bursting with the essence of a festive period, making it perfect for a celebration. Save the extra citrus syrup to use in brunch beverages, sweets, or to make another batch of bikinis.

Yields 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Drink (produces 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Combine the listed ingredients into a saucepan, bring to a gentle boil, mixing until the sugar dissolves. Then, turn off the heat allowing it to cool down fully. Transfer into a sealable bottle, cap it and store in the fridge, where it will keep for up to one month.
For the Batch Mix: Mix the specified liquid ingredients into a sizeable container, allow it to infuse for 60 minutes, then strain , ideally through muslin, so it's completely strained.
For serving: Measure 85ml of your batch mix into a mixing glass filled with ice, gently stirring carefully for one minute to cool it down. Pour into an frosted cocktail glass or a similar vessel, top with the cranberries and complete it by giving it a brief mist with the mandarin essence over the top.
